Mashed Potato Pizza

Mashed Potato Pizza is the perfect way to use up leftover mashed potatoes and is truly one of my favorite pizzas!

I saw a picture of Mashed Potato Pizza on a friend’s instagram and haven’t been able to get my mind off of it. She was eating at a local to her pizza restaurant called New Haven Pizza and shared a picture of this famous menu item. I had already planned to make a batch of  Slow Cooker Mashed Potatoes so what was leftover made the perfect base for this pizza.

The breakdown of this delicious pie goes like this: homemade pizza crust, creamy mashed potatoes (which end up replacing the sauce,) crispy bacon, sweet corn, scallions or chives and mozzarella cheese. The combo is perfect and this is such good pizza guys! The potatoes just make everything so rich and the texture of the corn and bacon just make it out of this world.

The cheese melts on top of everything and with a nice chewy crust it is truly the perfect gooey bite. We always make corn for Thanksgiving so I definitely plan to make this for my family again after the holiday. What is your favorite thing to do with Thanksgiving leftovers? Mashed Potato Pizza- Ingredients

Ingredients needed for Mashed Potato Pizza:

  • Pizza Dough
  • Mashed Potatoes (room temperature)
  • Crumbled Bacon
  • Green Onions
  • Sweet Corn
  • Sour Cream
  • Mozzarella Cheese
  • Salt & Black Pepper
  • Garlic
  • A bit of olive oil

Mashed Potato Pizza

Supplies needed for Mashed Potato Pizza:

  • Pizza Stone, Baking Sheet or Pizza Pan
  • Parchment Paper
  • Flour for rolling out your ball of dough
  • Pizza Peel (not essential but makes everything easier.)

The process:

Bring your pizza dough to room temperature if it isn’t already and stretch it to a 12-inch circle on a floured surface. Brush it with olive oil and minced garlic and then spread on a later of mashed potatoes, add the mozzarella, bacon, corn & green onions. Add salt & pepper and bake for 10-15 minutes until crispy. (I like my pizza very crisp but about 12 minutes seems to be the right baking time for me. Serve with a dollop of sour cream. So good!

  • Roasted Garlic
  • Cooked Broccoli
  • Cheddar Cheese
  • Italian Seasoning
  • Red Onions

While this pizza may not be a real Italian Pizza Experience it is fun, different and really so good! Mashed potatoes and pizza are both a comfort food for me and together this combo is just out of this world. (And I’d choose a white pizza over one with tomato sauce any day of the week!)

Mashed Potato Pizza

Yield: 1 12 inch pizza
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Mashed Potato Pizza is the perfect use for leftover mashed potatoes!

Ingredients

  • ½ batch of Pizza Crust
  • 1½ cups mashed potatoes
  • 8 slices of cooked bacon, crumbled
  • 1 cup of sweet corn
  • 3 scallions, sliced thin
  • 1½ cups shredded mozzarella cheese
  • Preheat oven to 500F and heat your pan or pizza stone along with it for at least 30 minutes
  • Place a sheet of parchment paper on your work surface and place your dough ball right in the middle.
  • Using olive oil-coated hands, roll and spread the dough until it is thin and shaped. (Form a thin crust ridge around the edge.) I found using a bit of extra oil made it easier to spread and actually make thin.
  • When your dough shaped on the parchment, spread the mashed potato on top, leaving the crust. Sprinkle the bacon, corn, and scallions on top of the potatoes and then top with the cheese.
  • Use a cutting board or pizza peel to help transfer the pizza to the hot stone.
  • Bake for 10-12 minutes, or until golden and crisp.

  1. Making this for a friend of mine who told me about the recipe. Ive made pretty much every pizza under the sun (except for Banana Curry pizza, which is really popular in Sweden) and im pretty excited to see what it tastes like. I made the whole thing from scratch and used bacon lardons and roasted sweet corn with rosemary, thyme, parsley and garlic. Even poached the potatoes with lemon and rosemary. Ill let you know how it comes out.
