Okay okay….. pick up your jaws from the floor. Yes- I’m posting something that is not only healthy, but it actually has a vegetable in it. (I may be having a major identity crisis.) At least it’s sweet- so that still counts. I mean it actually tastes SO sweet and delicious that you honestly won’t know the vegetables are in there. (I promise.)
One of my New Years goals is to eat breakfast more regularly, but I really never feel like eating in the mornings. To solve this, I bought a ton of frozen fruit and have been experimenting with different smoothie recipes. It’s amazing how much fruit you can cram into one glass of smoothie! This way, I win in both ways right? And smoothies are just so good. They make feel like I’m having a milk shake.
In terms of the “why doesn’t it taste like spinach” issue- I really believe the use of pineapple makes a huge difference. It is so sweet and acidic that it really becomes the star. Adding banana also gives it that creamy texture and more sweetness. You can obviously experiment with a whole slew of fruits, but this is my favorite combo….and it’s my favorite color. :)
- 1 frozen banana (if using a fresh banana just add a little ice)
- 1 cup fresh pineapple
- ½ cup frozen peaches (or mango would work)
- 1 cup fresh spinach, rinsed and dried.
- ¼-1/2 cup almond milk (or regular, soy etc.)
- Combine all ingredients in a blender/food processor and puree until smooth. If mixture is too thick add more almond milk.

I have been so intrigued by green smoothies, I really need to just make one… I hate pineapple though, could I sue something else?
And hey, I bet there’s carrot cake on here somewhere, so the veggie isn’t that outrageous! ;)

I love a green smoothie – although mine tend to be quite radical and hated by all. Over christmas I made one from beetroot, red cabbage, brussel sprouts, cucumber, celery and apple. It was surprisinglly delicious!

I think you could skip the pineapple if you used fruit juice instead of almond milk. You could then use peeled apple or pear to add a bit more fruit!

I am an avid drinker of green smoothies since the week of Thanksgiving. The first one brought my distance vision back to normal. Thanks to all the wonderful kale I am adding to my smoothies, for the first time in my entire 50 years of life I have strong nails! My ph is now 7.5! I also went cold turkey and am 99.999% raw organic vegan-overnight after I started drinking green smoothies. I can’t say enough about these wonderful green glasses of goodness.

Good on you Audra! We’ve been having Green Monsters for the past few months several times a week for breakfast, and it’s giving us loads of extra energy. I do love breakfast usually but on the occasions I can’t get greens at lunch, I always feel better for having had them in the AM :)

Good Morning! Yes, it’s possible. I was following the Green Smoothie Challenge (until I moved and had to leave my blender behind to be rectified soon *sigh*) and it was fantastic. Day one is 4 bananas, 2 cups of water and Romaine Lettuce. Don’t turn your nose just yet. You can’t even taste the lettuce and when I added flax seed oil and cinnamon, it tasted like Banana Bread! Yum. I never had so much energy and actually lost weight so I could eat more sweets! It’s a win-win for the baker in me. I am sure that you could use Almond milk instead of water if you wanted to and I have even used young coconut water in some of the smoothies for the benefits.
