Fresh Pasta Dough
Yield: 1 lb. of pasta
  • 2 cups all purpose flour
  • 1 cup semolina flour*
  • 3 whole eggs
  • ½-1 cup of water
  • salt for cooking pasta
  1. Using either the bowl of a stand mixer, or by hand on your counter, mix the flours together. Create a well in the center of the flour and crack the eggs into it. Mix by hand or with the paddle attachment of your mixer until a scraggy dough forms. Add water, a little at a time until the dough holds together in a dry ball. (Add more water if rolling the pasta.)
  2. Cover dough with a clean towel as you pop walnut-sized pieces into the exruder attachment.
  3. Arrange formed pasta single layer on a cookie sheet until you're ready to cook it.
  4. Boil salted water and cook pasta for 3-4 minutes.
*I like the texture and flavor semolina flour adds to the mix but if you don't have it, I've had great success with all AP flour as well.
