Brown Sugar Pie

Brown Sugar Pie

A simple pie with rich brown sugar flavor and a touch of sea salt.

Ingredients

  • 1 single layer pie crust*
  • 1/2 cup heavy cream (120 g)
  • 1 tablespoon vanilla extract (42 g)
  • 1 3/4 cup brown sugar (280 g)
  • 1 stick butter, melted ( 4 oz)
  • 2 eggs
  • flakey sea salt for sprinkling

Instructions

For the Crust:

  1. Roll dough on a lightly floured surface to a 12 inch circle. Transfer to a 9 inch pie plate and fold over/crimp/trim edges as desired.
  2. Prick bottom of the crust with a fork and line with parchment paper. Pop entire crust into the freezer while you preheat the oven to 375F.
  3. Fill crust with pie weights or dried beans and bake for 10 minutes.
  4. Remove parchment/weights and bake for 10 additional minutes.

For the filling:

  1. In a large mixing bowl whisk all the filling ingredients together until smooth and creamy, but don't over-mix.
  2. Pour into the par-baked pie shell and bake at 350F for 45-55 minutes or until the center of the pie no longer jiggles with you gently move the pie dish. (If your crust is geting too dark, you can cut a circle out of a sheet of foil and place the "donut" shake over the edge crust.)
  3. Allow to cool before slicing and serving with whipped cream or ice cream.
