Chewy Lemon White Chocolate Chip Cookies

Ingredients

  • 1 1/2 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup 1 1/2 sticks butter or margarine, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup sugar
  • 1 large egg
  • 1 tablespoon lemon juice
  • 2 cups white chocolate chips
  • zest from one lemon

Instructions

  1. Preheat oven to 375° F.
  2. Combine flour, baking soda and salt in a small bowl.
  3. Beat butter, brown sugar and granulated sugar in a large mixing bowl until creamy.
  4. Beat in egg and lemon juice; gradually beat in flour mixture.
  5. Stir in white chocolate chips and lemon zest.
  6. Drop by rounded tablespoon onto parchment-lined baking sheets.
  7. Bake for 7 to 10 minutes or until edges are lightly browned.
  8. Cool on baking sheets for 3 minutes; remove to wire racks to cool completely.
