Thanks, Audra, I've used this recipe a bunch of times. It comes out just like both my Polish and German grandmothers used to make, except they both used rectangular pans because that's what they had. We always had cheesecake like this for Easter, Thanksgiving and Christmas, at least, so this is a nostalgic thing for me.
Now I make it gluten-free so my mom can eat it. I just sub out the graham crackers for a box of Annie's gluten-free bunny cookies - 1 box makes about 1-1/2 cups of crumbs. That works great, you'd never know I was intentionally avoiding anything.

I got a similar recipe from a polish neighbor about 50 yrs ago, I’m not a fan of graham crackers so I use pecan sandies

Yes temp too high. I bake mine at 300 for about 45 min or until the center is stiff when I put the tip of a knife there. I bake the sour cream top at 350 for 10 minutes or until the sour cream is set

I started making this at age 12, Ladies Home Journal cookbook. I instantly realized the sour cream should not be cooked. It became rubbery. So, for nearly 60 years, I've just added the sour cream layer to the cheesecake when it comes out of the oven. That's plenty of heat to give it a little body (still cuts perfectly), but not overdue it.

THE BEST CHEESECAKE EVER!!! This is the closest recipe I’ve found that mimics the one my grandma always made when we were kids in the 80s. It is absolute perfection. I add, maybe a fourth of a teaspoon of cinnamon powder on top, just a small dusting. For anyone having a problem with this recipe, follow the directions exactly! It’s very important to do the steps when it comes to the eggs, timing, etc. I’ve made this a dozen times now and it’s my signature dish to bring to a party best one I’ve seen online!
