These are THE BEST cupcakes I have ever made!! I found this recipe when searching for cupcake recipes for our daughter's baby shower. I tested a batch and sent to work for comments and concerns. Someone chased me down the hallway asking for the recipe (I happily shared). The caramel sauce is unbelievable, but there is a learning curve....after several attempts at the recipe (because we tripled the recipe for the baby shower guests), I was never able to fully melt all the clumps. I just strained them out when I was transferring into the glass jar (and ate the clumps myself!). Soooo many people complimented the cupcakes---thank you Audra!!!

I don't think it's an altitude problem. I live at close to sea level (91 ft alt) and mine also came out dry. I cooked for 20 min in oven. I think it's more of a cake thing. It looks like a high ratio butter cake but it's lean on fats which makes it a little less moist...

Can Swiss meringue buttercream be frozen? Asking because I’m making these to look like buckets of popcorn and the individual “popcorn” pieces are made out of buttercream and are chilled or frozen initially until they are assembled as seen here https://www.tiktok.com/t/ZP8JxvA5h/

Thoughts?

Oh wow. These look so incredible, I'm almost scared to make them out of fear of eating every single one in one sitting -- haha! There's just nothing better than sea salt and caramel. I think I'll make a batch of these this weekend to treat myself. Thanks so much for sharing the recipe!
