This cookie is crisp around the edges but still soft and fluffy in the middle, with loads of warm spices, and a dreamy cream cheese frosting. All those flavors together result in my favorite pumpkin cookies.

In a large bowl cream together the butter and brown sugar.

Add the egg, vanilla and pumpkin and then the dry ingredients until a soft dough has formed.

Bake cookies at 350F for about 12 minutes and then cool on a wire rack.

Frost cooled cookies with cream cheese frosting. Store at in the fridge until ready to serve.
