{Milk Bar Mondays} Crack Pie

I am so excited to share this week’s “Milk Bar Monday” treat with you. The “Crack Pie” may be considered to be Milk Bar’s signature dessert, (they have it trademarked after all,) and I totally see why. This pie is insanely good, and actually pretty easy to make (compared to the other recipes in the book at least.) Mine was eaten in less than 24 hours and everyone that got to taste it just loved the gooey filling and slightly salty crust.

The oatmeal cookie crust really takes this pie up to a whole new level. To make it, you basically bake up a huge oatmeal cookie until it’s golden and crisp, then you crush it down to crumbs and mix it with some melted butter. That gets pressed into the pie dish and filled with a custard-like filling that is full of magic ingredients like freeze-dried corn and milk powder. It’s hard to know exactly what role they play in making this pie so great, so I’m not going to try to figure it out. All I know is that the filling has a rich, toffee-like flavor that makes it near impossible to stop eating.

    I really couldn’t stop making it either and for as good as it was, I was surprised at how easy it seemed. Yours looks so gooey and amazing, Audra!

    Great job with the pie Audra! I thought this recipe was one of the easier ones, but for some reason my pie just doesn’t seem right. Time to make it again ;)

    Hey! You can buy freeze-dried corn at Whole Food or on Amazon. Then you just grind it in a food processor and there you have corn powder!

    Confession: when I made the Milk Bar Crack Pie, I kind of ate the entire thing! (I kid you not). I did however spread it out over a few breakfasts, so that makes it okay, right? Yours looks fantastic :)
    I can’t wait to see how you like the compost cookies. When I made them, they came out quite crispy…. delicious, but crispy.
