Peach Buttermilk Upside Down Cake

Dear New York in the summer, I forgive you. 

I know in the majority  of my blog posts I have complained about your stinky, humid, too-hot-for-anything ways, but you have made it all right this year. It’s been much more pleasant than my first 8 summers and turning my oven on has not been half bad. This better mean you will be nicer this winter too as this past one was just stupid.

I’m so tired you guys. When I start writing letters to inanimate objects like cities and seasons, you can bet my sleep deprivation has suddenly gotten to the point of being a bit delirious over here.

So- instead of pretending I have something interesting to say about this recipe just know this: Peaches are in season, this cake is super easy, this cake is super fresh, light, and delicious. Have I talked you into it yet? Just make it ok?

Alright cool- I am going to go back to lying in the entryway to the kitchen to prevent Hugo from crawling in and licking the floor like a puppy. #whydoeshedothat?

Peach Buttermilk Upside Down Cake
 
Ingredients
  • ½ Caramel Sauce
  • 1 tablespoon brown sugar
  • 2 large peaches- cut into slices
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ stick unsalted butter, softened
  • ½ cup sugar
  • ½ teaspoon pure vanilla extract
  • 1 large egg (room temperature)
  • ½ cup well-shaken buttermilk
Instructions
  1. Preheat oven to 375F. Butter and flour an 8-inch cake pan. Set aside.
  2. In a medium-sized bowl stir together the flour, baking soda, powder, and salt.
  3. In a large bowl fitted with a paddle attachment, cream together the butter and sugar. Add the egg and vanilla extract and beat until smooth.
  4. Add the flour and buttermilk alternately, starting and ending with the flour. Mix on low speed until just combined.
  5. Spread the caramel sauce on the bottom of the cake pan and sprinkle the brown sugar on top. Arrange the peaches on top of the sugar and then spread the batter smoothly over the peaches.
  6. Bake for 25-30 minutes, or until a cake tester inserted into the middle of the cake comes out clean.

    baby gates are a mom’s best friend. And if your floor is reasonably clean – don’t sweat it! He is going to put worse things in his mouth and live to tell about it. And the cake looks gorgeous!! Peach is my favorite summer flavor and we are having a huge BBQ next weekend for Labor Day so think this is going on the menu!

    it’s just beautiful! tomorrow I will stop at the orchard that used to carry my very favorite ‘Red Haven’variety peaches (they lost ALL the Red Haven trees last winter), for a bushel of something else that will just have to do. I usually freeze them in 2 cup batches to enjoy all winter.

    my sister used to tell me that just when you think that you can’t take it anymore, babies move to the next thing. This should mean that you will get your much needed sleep soon! by the way, he is absolutely perfect!

    This cake looks like a winner! I was wondering, though, why the sugar says divided. I’m actually in the process of making it and am not sure what to do with the divided sugar. Thanks!

    I think our baby boys are only a few days apart so I feel you on the too-tired-to-think-delirium!:) Peaches are sweet & perfect to eat right now…yum!

    Because little boys secretly want to be dogs! How do I know? When my 17 yr old son (who is, btw, grounded and has to have his mommy take/pick up from school presently…that’s another story not involving dogs…girls/parties yes, dogs no…LOL) was 3, he befriended the sweet labs next door. Next thing you know, he was begging to eat his cereal from the bowl, spoonless, off the floor! To top it off, one day his older girl cousins came in screaming and declared, in horror, that my pup-son was naked and had pooped (sorry) in the garage! So, don’t worry about the floor licking…he’s building his immune system! Ha ha! And things just get more zany from there…trust me! But it’s all beautiful, and hilarious, and give me a boy any day of the week. They make for much less complicated tweens and teens than girls. And now I shall go make this fab cake and share it with my overgrown puppy….I mean, son!
