White Bean Lemon Rosemary Dip

It’s Super Bowl week and my mind is on fun party foods. Today is a healthy one that is so easy and delicious it makes an appearance and pretty much every football or other fun gathering I host. Have you ever made a dip with white beans? It’s way creamier than hummus in my opinion, just as full of protein, and so adaptable and delicious. While my guests usually count on me to have a selection of delectable sweet treats available, I always like to have a well rounded party spread and this is a long time favorite.

This is my favorite version, loaded with fresh rosemary, lemon and just a touch of garlic. It is amazing with almost any dippable object- I adore it with pretzels the most but of course crunchy veggies work too. Rosemary not your favorite herb? I’ve made this with basil and thyme as well with lots of success as well as way more garlic when I’m in the mood for that. A food processor or blender makes throwing this dip together take minutes and it tastes even better after sitting in the fridge for a day. I don’t plan on hosting much of a Superbowl Party this year, but luckily it’s so darn easy I can have it any old time I want!

White Bean Lemon Rosemary Dip

Yield: 4 servings

Ingredients

  • 2- 8 oz cans white beans, great northern, cannellini, navy beans etc. rinsed and drained
  • 2 large sprigs of rosemary, pulled off the stem
  • 1/4 cup extra virgin olive oil
  • 1 clove of garlic
  • Juice and zest of 1/2 a lemon
  • Salt and pepper to taste

Instructions

  1. Combine all ingredients in a food processor or blender. Process until smooth, adding salt and fresh black pepper as desired to taste.
  2. Serve cold or room temperature, drizzling with extra olive oil if desired.

  1. I’d kick myself for not having thought about a white bean dip before! I love white beans but never tried them in dip form…I also love the presence of rosemary (one of my favorite herbs) but I’m pretty sure I’ll be trying it with basil and maybe sage, too.
