Ingredients for the Applesauce Coffee Cake:

  • Unsweetened Applesauce
  • Butter or Oil
  • All purpose flour
  • Brown Sugar
  • Vanilla extract
  • Egg
  • Baking soda
  • Cinnamon 
  • Cloves
  • Nutmeg
  • Salt

For the Crumb Topping:

  • All-purpose Flour
  • Oats
  • Brown Sugar
  • Butter
  • Cinnamon
  • Cloves
  • Nutmeg
  • Baking soda
  • Pinch of salt

For the (optional) Cinnamon Glaze:

  • Cinnamon
  • Powdered Sugar
  • Milk or Cream 

Supplies needed for Applesauce Crumb Cake:

  • Large bowl
  • Electric Mixer
  • 9 inch Springform pan or similar sized pan

Applesauce Crumb Cake

Instructions:

  1. Preheat oven to 350F. Grease a springform pan and line with parchment paper if it isn’t nonstick. 
  2. Prepare the crumb topping: In a small bowl, combine flour, oats, and brown sugar. Add melted butter and stir together with a fork until crumbly.
  3. In a large mixing bowl, cream together oil or butter with the brown sugar until light and fluffy. 
  4. Add egg and vanilla and mix well. 
  5. Gradually add dry ingredients (flour, baking soda, salt, and spices) to the cake batter, mixing until just combined. Fold in apple sauce and stir gently with a rubber spatula until evenly incorporated.
  6. Pour the batter into the prepared pan, spreading it evenly with a spatula. Sprinkle the crumb topping over the top of the batter in an even layer.
  7. Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the middle of the cake comes out with moist crumbs (If it’s totally clean- the cake is likley over-baked.)
  8. Once baked, remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Slice into generous portions and serve your soft, buttery Apple Crumb Cake with a dusting of powdered sugar, caramel sauce, or a simple glaze made with cinnamon, powdered sugar, and milk or apple cider.

A light and fluffy cake made with apple sauce and warm spices.

Ingredients

  • 1 ¾ cups all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 1 ½ teaspoons baking soda
  • ¼ cup oil or softened butter (see note)
  • 1 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups unsweetened applesauce

For the Crumb Topping:

  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup metled butter

For the Cinnamon Glaze

  • 1/2 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon milk or cream (or more as needed)

Instructions

  1. Prepare a 9 inch springform pan or other similar sized pan by greasing and dusting with flour. Preheat oven to 350F and set aside.
  2. In a small mixing bowl combine the dry ingredients and set aside.
  3. In a large mixing bowl cream the oil or butter with the brown sugar by mixing on medium-high speed until light and fluffy. Add the egg and vanilla and mix well.
  4. Add the dry ingredients gradually on low speed until just combined.
  5. Fold in the apple sauce and mix until no dry areas or clumps of flour remain.
  6. For the crumb topping: Mix all ingredients together in a small bowl and stir together until well-combined and crumbly.
  7. Add cake batter to the prepared pan and sprinkle the crumb topping on top.
  8. Bake for 35-45 minutes or until a toothpick inserted into the middle of the cake coems out with a few moist crumbs. (Check on the cake every few minutes for done-ness as every oven is different and you don't want to overbake it.)
  9. For the glaze stir together the powdered sugar, cinnamon, and milk or cream with a fork until smooth and drizzle over cake.
